Originally a symbol of hope from the bible. After the flooding, Noah saw a rainbow promising life would get better. The rainbow shows that although you might be in a storm at the moment, it will pass, there is light at the end of the tunnel. 
During Covid the rainbow was embraced by people to represent hope and freedom for the future.
